About your questions:
1. There is no problem, excepted if you or your husband has flu symptons. Mauritius Airport is just installing systems in order to to detect swine flu. The project is being funded by the World Health Organisation.
2. As far as I know, there is no confirmed case in Mauritius, although some cases have been suspected.
However, I would add 2 points:
First, don’t expect that a touristic country (Mauritius or any other one) will alert everybody about possible cases. If any, they will just report it to WMO without too much publicity.
Second, risks are probably higher in plane than in the country.
3. See first answer. Flu symptoms are more than being cold.

As for sightseeing in Mauritius, hiring a taxi for a day or half a day is a quite common way to get around Mauritius. Taxis are waiting for you in the morning at each hotel.
